Fall baking is in full swing in your homes, I’m sure!
I grew up in Mexico and my mom is the best cook ever. She can make anything. Zucchini bread happens to be one of her favorites. We are addicted to zucchini bread in this house. I’m excited to share the favorite recipe with you. It is the perfect addition to your Thanksgiving desserts.
I’m so thankful and lucky none of us are allergic to nuts because this bread is divine with tons of walnuts in it, I highly recommend Diamond Nuts for baking. They are always fresh and delicious.
- 3 cups all purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 2 tsp ground cinnamon
- 1 tsp grated nutmeg
- 1-1/2 cups sugar
- 3 beaten eggs
- 1 cup vegetable oil
- 1 cup grated zucchini
- 1 cup grated carrot
- 1 cup chopped walnuts
- Preheat oven 350 degrees. Spray two 9x5 loaf pans with PAM.
- Sift together flour, baking powder, baking soda, salt, cinnamon and nutmeg in a large mixing bowl.
- Add sugar and blend. Mix the eggs with the oil and add that to the flour mixture. Mix again. Mix the zucchini, carrots and walnuts. Add and mix in.
- Pour into two greased loaf pans. Bake for approximately 50 minutes or until a toothpick inserted in the center comes out clean. Let cool before slicing.

My girls helped themselves to the bread right away. It’s easy to eat 3-4 servings…..no joke. It’s that yummy!
